Ingredients
- 1 pound large shrimp, shelled and deveined ( chop roughly )
- 4 tablespoons mayonnaise
- 1/2 cup green onions, chopped
- 1 tablespoon each- lemon juice & dijon mustard
- 1/2 teaspoon worcestershire sauce
- 1/2 cup ritz crackers, finely crumbed
- 1/4 teaspoon old bay seasoning
- 1/2 tablespoon chopped parsley
- 1/4 teaspoon dried dill
- 1 - egg yolk
- BREADING
- 1 1/2 cups toasted panko crumbs
- 1 teaspoon old bay seasoning
- Oil - and butter for frying

Step 1Chop shrimp after cleaning. In a medium bowl, stir together the shrimp, mayonnaise, dill, parsley, onion,mustard, lemon juice, Worcestershire sauce, old bay seasoning, egg yolk and crackers. Mix well and chill for easier handling. Place panko crumbs with old bay seasoning in a bowl, toss. To my iron skillet I added two tablespoonful of each - oil and butter. Over medium high heat, once butter is melted. Dip each shrimp patty into seasoned crumbs, pressing so they stick well. Place in skillet and fry for 4 minutes or until golden, then continue on the other side. Serve alone, in a sandwich or as appetizer with your favorite seafood sauce.
