shrimp with spicy puttanesca sauce

Ingredients

  • 8 ounces linguine or spaghetti noodles, uncooked
  • 1 tablespoon olive oil
  • 12 ounces shrimp, medium size, peeled & deveined
  • 4 cloves garlic, minced
  • 3/4 teaspoon red pepper flakes (or to your liking)
  • 1 cup onion, finely chopped
  • 1 can 14 oz. can stewed tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 tablespoons kalamata olives, pitted and chopped
  • 1 tablespoon capers, drained
  • 1/4 cup fresh parsley, chopped

How To Make shrimp with spicy puttanesca sauce

  • Step 1
    Cook pasta according to pkg. instructions - drain and set aside.
  • Step 2
    Heat oil in a large nonstick skillet over medium-high heat. Add shrimp, garlic and red pepper flakes -- saute 3-4 minutes or until shrimp are opaque. Remove shrimp mixture to a bowl and set aside.
  • Step 3
    Add onion to skillet and cook approx. 5 minutes; stirring occasionally. Add undrained tomatoes, tomato paste, olives and capers. Simmer mixture for approx. 5 min.
  • Step 4
    Add shrimp mixture to the skillet and simmer 1 minute. Stir in parsley and serve over pasta.
