Shrimp with Roasted Red Peppers

Shrimp goes well with so many things - this version uses roasted red peppers. Blanched broccoli or pea pods would be a tasty addition. If using pre-cooked shrimp, add at the very end, just so they're heated and not rubbery.

Ingredients

  • 1/2 lb
    raw shrimp, peeled and deveined
  • 1 Tbsp
    olive oil or grapeseed oil
  • 1/2 medium
    onion, minced
  • 2 clove
    garlic, minced
  • 1 pinch
    red pepper flakes, or to taste
  • 6 oz
    roasted red pepper
  • 1/4 c
    dry white wine
  • 1/4 c
    half and half
  • 2 Tbsp
    snipped fresh basil (use 2 teaspoons if dried)
  • 1/3 c
    shredded parmesan cheese
  • 1 c
    brown rice, cooked
  • ·
    salt and pepper, to taste
  • ·
    chives or green onion tops, chopped, for garnish

How to Make Shrimp with Roasted Red Peppers

Step-by-Step

  1. Thaw shrimp if frozen, then rinse and pat dry with paper towels. Set aside.
  2. In a large skillet, heat oil over medium-high heat. Add onion. Cook and stir for 1 to 2 minutes or just until onion is tender, add garlic and cook for 1 more minute. Add shrimp and crushed red pepper; cook and stir for 2 minutes. Add roasted peppers and wine.
  3. Bring to boiling; reduce heat. Simmer, uncovered, about 2 minutes or until shrimp are opaque, stirring occasionally. Stir in cream. heat, but not to boiling; reduce heat and simmer gently, uncovered, for 1 minute. Stir in basil, add salt and pepper, to taste.
  4. Serve shrimp mixture and cheese over hot cooked rice. Garnish with chives.
