shrimp with roasted red peppers
Shrimp goes well with so many things - this version uses roasted red peppers. Blanched broccoli or pea pods would be a tasty addition. If using pre-cooked shrimp, add at the very end, just so they're heated and not rubbery.

Ingredients
- 1/2 pound raw shrimp, peeled and deveined
- 1 tablespoon olive oil or grapeseed oil
- 1/2 medium onion, minced
- 2 cloves garlic, minced
- 1 pinch red pepper flakes, or to taste
- 6 ounces roasted red pepper
- 1/4 cup dry white wine
- 1/4 cup half and half
- 2 tablespoons snipped fresh basil (use 2 teaspoons if dried)
- 1/3 cup shredded parmesan cheese
- 1 cup brown rice, cooked
- - salt and pepper, to taste
- - chives or green onion tops, chopped, for garnish
How To Make shrimp with roasted red peppers

Step 1Thaw shrimp if frozen, then rinse and pat dry with paper towels. Set aside.

Step 2In a large skillet, heat oil over medium-high heat. Add onion. Cook and stir for 1 to 2 minutes or just until onion is tender, add garlic and cook for 1 more minute. Add shrimp and crushed red pepper; cook and stir for 2 minutes. Add roasted peppers and wine.

Step 3Bring to boiling; reduce heat. Simmer, uncovered, about 2 minutes or until shrimp are opaque, stirring occasionally. Stir in cream. heat, but not to boiling; reduce heat and simmer gently, uncovered, for 1 minute. Stir in basil, add salt and pepper, to taste.

Step 4Serve shrimp mixture and cheese over hot cooked rice. Garnish with chives.
