My favorite seafood is shrimp and lobster..this recipe only contains the shrimp..it is rich in flavor and colorful.

Ingredients
- 1 cup quick cooking grits
- 2 tablespoons olive oil, light
- 1 1/2 pounds large shrimp peeled and deveined
- 2 teaspoons cajun seasoning
- - salt and pepper to taste
- 3 tablespoons fresh lime juice
- 3 cloves garlic thinly sliced
- 1 cup frozen corn thawed or use fresh cooked
- 2 cups baby spinach
- 1
- 1 small red bell pepper thinly sliced
- 3 - green onions sliced
How To Make shrimp. spinach and grits

Step 1Cook the grits according to package directions.Heat oil in skillet over medium heat, season the shrimp with the Cajun seasoning add the shrimp and cook for 2 minutes, turn and cook the other side for 2 minutes until opague, remove the skillet from the heat and add the lime juice and toss to coat. transfer to a plate.

Step 2Wipe out the skillet and add the remaining oil..heat and add the garlic and cook stirring for about 2 minutes until golden...add the corn. pepper and spinach and stir together cooking for 3 to 4 minutes,,,add shrimp toss together and serve over the grits.
