My favorite seafood is shrimp and lobster..this recipe only contains the shrimp..it is rich in flavor and colorful.

Ingredients

  • 1 c
    quick cooking grits
  • 2 Tbsp
    olive oil, light
  • 1 1/2 lb
    large shrimp peeled and deveined
  • 2 tsp
    cajun seasoning
  • ·
    salt and pepper to taste
  • 3 Tbsp
    fresh lime juice
  • 3 clove
    garlic thinly sliced
  • 1 c
    frozen corn thawed or use fresh cooked
  • 2 c
    baby spinach
  • 1

  • 1 small
    red bell pepper thinly sliced
  • 3
    green onions sliced

How to Make Shrimp. spinach and Grits

Step-by-Step

  1. Cook the grits according to package directions.Heat oil in skillet over medium heat, season the shrimp with the Cajun seasoning add the shrimp and cook for 2 minutes, turn and cook the other side for 2 minutes until opague, remove the skillet from the heat and add the lime juice and toss to coat. transfer to a plate.
  2. Wipe out the skillet and add the remaining oil..heat and add the garlic and cook stirring for about 2 minutes until golden...add the corn. pepper and spinach and stir together cooking for 3 to 4 minutes,,,add shrimp toss together and serve over the grits.
