shrimp scampi with asparagus
I love all kinds of shrimp scampi, but I am so sloppy eating spaghetti noodles! This version uses radiatore pasta, but really, any kind of pasta will do, even spaghetti!

Ingredients
- 1/2 pound shrimp (raw or cooked - see notes for cooking time)
- 1 1/2 cups radiatore pasta
- 4 tablespoons butter, divided
- 1 tablespoon olive oil
- 2 tablespoons chopped onions
- 1-2 clove garlic, minced or 1/4 - 1/2 teaspoon garlic powder
- red pepper flakes or spicy mixture (I used Slap Yo Mama)
- 1 cup white wine
- 1 tablespoon fresh lemon juice
- 1/2 cup asparagus, cut into 1/2 inch pieces
- 1 tablespoon half and half or cream
- salt and pepper, to taste
- Parmesan cheese, to taste
- 1-2 Roma tomatoes, cut up or 10-12 grape tomatoes, halved
How To Make shrimp scampi with asparagus

Step 1Clean the shrimp and remove the tails, if still on. Blot dry, sprinkle with salt and pepper, and set aside.

Step 2Prepare the pasta according to package directions. While the pasta boils, melt half the butter in a skillet and add the shrimp. Saute until the shrimp turns pink. (I use cooked shrimp, which are already pink, so they only need to be warmed up.) Remove the shrimp and set aside.

Step 3Add the olive oil to the same skillet. Add the chopped onion, garlic, and pepper flakes. (Instead of flakes, sprinkle on peppery salt, like Slap Yo Mama cajun salt mix.)

Step 4When the onions are translucent, add the wine and lemon juice. Bring to a boil and lower the heat so the wine can reduce. If the asparagus are thick, add to the wine. If they are thin, let the wine cook for about 5 minutes before adding the asparagus, and cook for about 2 more minutes.

Step 5Add the butter and cream to a pan; stir to melt and combine.

Step 6Return the shrimp to skillet and add the pasta and tomatoes. Stir to distribute the sauce, and season with salt and pepper, to taste. Sprinkle with cheese before serving.
