shrimp scampi
This recipe came to me via my sister. A favorite at the famous Gilroy Garlic Festival. If you like scampi you'll love this recipe!

Ingredients
- 2 pounds medium raw shrimp, deveined and shell off.
- 6 cloves fresh garlic
- 3/4 pound salted butter (3 cubes)
- 1 jar capers, drained
- 1 - lemon thinly sliced
- - olive oil for sauteing
How To Make shrimp scampi

Step 1After you have deveined and shelled your shrimp, rinse it well and set aside.

Step 2In fry pan saute minced garlic in small amount of olive oil. Add butter and melt, but keep a close watch not to burn your butter. Add capers and shrimp, cook shrimp for 2 minutes on each side, they will turn a nice pink color.

Step 3Top with lemon slices and simmer till lemon is tender. Serve and enjoy!
