Ingredients

  • 1 1/2 pounds shrimp peeled and deviened
  • 1/4 cup lobster or chicken stock
  • SAUCE
  • 1/2 cup frozen peas
  • 1 cup lobster or chicken stock
  • 1 tablespoon each soy sauce and cornstarch
  • 1 teaspoon sugar

How To Make shrimp & peas sous vide

  • Step 1
    Prepare the water bath to 140 degrees. Put the shrimp and the stock in a sealable baggie and immerse in the water bath removing air while immersing.
  • Step 2
    Cook for 40 minutes.
  • Step 3
    Combine the peas, stock, and sugar together in a saucepan. Heat to boiling. Mix the soy sauce and cornstarch together and stir into sauce to thicken
  • Step 4
    Serve the sauce with the peas.
