- 1 1/2 pounds shrimp peeled and deviened
- 1/4 cup lobster or chicken stock
- SAUCE
- 1/2 cup frozen peas
- 1 cup lobster or chicken stock
- 1 tablespoon each soy sauce and cornstarch
- 1 teaspoon sugar
How To Make shrimp & peas sous vide

Step 1Prepare the water bath to 140 degrees. Put the shrimp and the stock in a sealable baggie and immerse in the water bath removing air while immersing.

Step 2Cook for 40 minutes.

Step 3Combine the peas, stock, and sugar together in a saucepan. Heat to boiling. Mix the soy sauce and cornstarch together and stir into sauce to thicken
