Ingredients

  • 1 pound head on shrimp
  • 1 tablespoon vegetable oil
  • 1 tablespoon grated ginger
  • 4 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1/2 tablespoon garlic chili sauce
  • 1 can coconut cream (15 oz)
  • scallions, green parts only, for garnish
  • sticky rice, for serving

How To Make shrimp in creamy coconut milk

  • Step 1
    Clean the shrimp, deveining it and trimming the tendrils, leaving the head on. Set aside. Heat the oil in a wok. Add the ginger and garlic and saute 2 minutes. Add the fish sauce and cook 1 minute. Stir in the garlic chili sauce.
  • Step 2
    Add the coconut cream and bring to a simmer. Let simmer about 10 minutes. Add the shrimp and cook about 5 minutes, stirring constantly to get the shrimp pink on all sides.
  • Step 3
    Mound a cup of sticky rice in the middle of a dish. Place the shrimp around the rice and pour some sauce around the bowl. Garnish with scallions.
