This was my dear friend Terri Carter's recipe. I changed it a little to suit my tastes.

Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1/3 cup olive oil
  • 1/4 cup all purpose flour
  • 1 cup hot water
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 1 teaspoon garlic salt
  • 1/4 teaspoon thyme
  • 1/4 teaspoon cayenne
  • 8 ounces tomato sauce
  • 1 - bay leaf
  • 1/8 teaspoon pepper
  • 4 cups cooked rice
  • 1/2 teaspoon lemon juice

How To Make shrimp creole

  • Step 1
    Heat oil in skillet over medium high heat.
  • Step 2
    Blend in flour, stirring constantly until lightly browned.
  • Step 3
    Add water gradually. Cook stirring constantly until thickened.
  • Step 4
    Add onion, bell pepper and celery and cook 2 minutes.
  • Step 5
    Add remaining ingredients except shrimp and rice. Cover and cook for 15 minutes.
  • Step 6
    Add shrimp and cook an additional 5 to 7 minutes until shrimp is done.
  • Step 7
    Remove bay leaf.
  • Step 8
    Serve over the hot cooked rice.
