This was my dear friend Terri Carter's recipe. I changed it a little to suit my tastes.

Ingredients

  • 1 lb
    raw shrimp, peeled and deveined
  • 1/3 c
    olive oil
  • 1/4 c
    all purpose flour
  • 1 c
    hot water
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 1/4 c
    chopped green bell pepper
  • 1 tsp
    garlic salt
  • 1/4 tsp
    thyme
  • 1/4 tsp
    cayenne
  • 8 oz
    tomato sauce
  • 1
    bay leaf
  • 1/8 tsp
    pepper
  • 4 c
    cooked rice
  • 1/2 tsp
    lemon juice

How to Make Shrimp Creole

Step-by-Step

  1. Heat oil in skillet over medium high heat.
  2. Blend in flour, stirring constantly until lightly browned.
  3. Add water gradually. Cook stirring constantly until thickened.
  4. Add onion, bell pepper and celery and cook 2 minutes.
  5. Add remaining ingredients except shrimp and rice. Cover and cook for 15 minutes.
  6. Add shrimp and cook an additional 5 to 7 minutes until shrimp is done.
  7. Remove bay leaf.
  8. Serve over the hot cooked rice.
