shrimp creole
This was my dear friend Terri Carter's recipe. I changed it a little to suit my tastes.

Ingredients
- 1 pound raw shrimp, peeled and deveined
- 1/3 cup olive oil
- 1/4 cup all purpose flour
- 1 cup hot water
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup chopped green bell pepper
- 1 teaspoon garlic salt
- 1/4 teaspoon thyme
- 1/4 teaspoon cayenne
- 8 ounces tomato sauce
- 1 - bay leaf
- 1/8 teaspoon pepper
- 4 cups cooked rice
- 1/2 teaspoon lemon juice
How To Make shrimp creole

Step 1Heat oil in skillet over medium high heat.

Step 2Blend in flour, stirring constantly until lightly browned.

Step 3Add water gradually. Cook stirring constantly until thickened.

Step 4Add onion, bell pepper and celery and cook 2 minutes.

Step 5Add remaining ingredients except shrimp and rice. Cover and cook for 15 minutes.

Step 6Add shrimp and cook an additional 5 to 7 minutes until shrimp is done.

Step 7Remove bay leaf.

Step 8Serve over the hot cooked rice.
