~ shrimp creole ~ my way

I had some shrimp I needed to use and some green pepper and celery about to expire....so, this is what I threw together. I only had enough shrimp for a few helpings, but the recipe could easily be doubled. So tasty and easy! Season to your own heat tolerance...mine was just right for us! Enjoy!

Ingredients

  • 1/4 cup butter
  • 3/4 cup chopped onion
  • 1/2 cup fine chopped celery
  • 1 medium green pepper, fine chopped
  • 1 large garlic clove, minced
  • 8 ounces tomato sauce
  • 1/2 cup water
  • 1 - bay leaf
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 2 teaspoons parsley flakes
  • 1/2 teaspoon slap ya mama cajun seasoning or any cajun seasoning
  • 8 ounces raw shrimp- med
  • Prepared - rice for 2 or 3

How To Make ~ shrimp creole ~ my way

  • Step 1
    In a large skillet over medium heat, melt butter. To this add pepper, celery, onion and garlic. Cook and stir until onion is tender.
  • Step 2
    To this add sauce, water and spices. Simmer for 5 minutes.
  • Step 3
    Add the shrimp, heat till boiling, cover and simmer for 15 minutes or until shrimp are cooked and sauce has thickened some. Taste and reseason if need be. Remove bay leaf.
  • Step 4
    Serve over rice!
