Ingredients

  • 4 slices bacon
  • 10 cups water divided
  • 1 tablespoon salt
  • 2 cups grits
  • 1 1/2 cups shredded gouda cheese
  • 3 tablespoons butter divided
  • 2 teaspoons cracked black pepper
  • 4 cloves garlic minced
  • 2 pounds shrimp peeled and deveined.
  • 1/4 cup dry white wine
  • juice of 1 lemon
  • 4 green onions diced

How To Make shrimp, & bacon with creamy gouda grits

  • Step 1
    Cook the bacon until crisp. Remove to paper towel once cooled break into small pieces. Set aside. Reserve the bacon grease
  • Step 2
    Place water in a large pot. Add the salt and bring to a boil. Whisk in the grits and cook for 10 minutes on med low heat. Whisk to keep lumps away. Add the cheese and 2 tbsp of butter and cook until cheese is melted and smooth. Taste and season with salt and pepper to taste. Cover and set aside.
  • Step 3
    Add the garlic to the bacon grease and saute 1 minute. Add the shrimp and cook until pink on both sides. Remove shrimp and deglaze with the wine. Let most evaporate.
  • Step 4
    Add the shrimp and bacon back to the pan and add the remaining tbsp of butter and lemon juice.
  • Step 5
    Serve over the grits and topped with green onions.
