Ingredients

  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 1 cup lobster meat
  • 1 small yam, peeled and sliced into matchsticks
  • 1 medium shallot, minced
  • 4 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 cup chicken stock
  • 1/2 cup mango chutney
  • 1 1/2 cups heavy cream
  • 3 ounces rice noodles

How To Make shrimp and lobster mango chutney curry with yams

  • Step 1
    Cook the noodles according to package directions and drain.
  • Step 2
    Add olive oil to a wok or large skillet. Add the shallots, garlic, yam matchsticks, and shrimp Cook until the shrimp is pink. Stir in the curry powder and lobster meat.
  • Step 3
    Add the chicken stock and cook for 3 minutes.
  • Step 4
    Stir in the mango chutney and heavy cream. Cook for another 2 minutes. Taste and season with salt and pepper. Serve over the noodles.
