Ingredients
- FOR THE MARINADE
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons dark brown sugar
- 2 cloves garlic minced
- 1 inch piece ginger grated
- 2 scallions chopped
- 1 tablespoon chili garlic sauce or sriracha
- 2 tablespoons sake
- FOR THE TUNA STEAKS
- 4 medium sushi grade tuna steaks
- 1/4 cup each black sesame seeds and white sesame seeds
- 2 tablespoons peanut oil
How To Make sesame crusted korean tuna steaks

Step 1Mix the ingredients for the marinade together. Add the tuna steaks to a large baggies and add the marinade and zip it sealed. Marinate overnight or at least six hours.

Step 2Remove the tuna steaks from the marinade. Strain the marinade through a fine mesh strainer discarding the solids. Place the liquid in a saucepan and bring to a boil. Reduce heat to medium and simmer 15 minutes to reduce and thicken the sauce.

Step 3In the meantime Mix the black and white sesame seeds together. Roll the edges of the tuna steaks in the seeds. Place a cast iron skillet over high heat. Once hot add the oil and let sit until a drop of water sizzles in the pan. Add the tuna steaks and sear on both sides turning and cooking until desired doneness. If you like your tuna cooked through watch closely turning often so they don't burn. May have to turn the heat down. Drizzle with the sauce to serve.
