Ingredients
- ROASTED TOMATO JAM
- 2 pints multi colored grape tomatoes
- 2 cloves garlic, minced
- 1/4 cup chopped red onion
- 4 teaspoons balsamic vinegar
- 5 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon cinnamon
- drizzle olive oil
- 1 tablespoon fresh parsley, chopped
- TUNA
- 2 tuna steaks (6 oz each)
- salt and pepper
- 1 tablespoon olive oil
- 4 tablespoons butter
- 2 sprigs rosemary
How To Make seared tuna with roasted grape tomato jam

Step 1To make the tomato jam, preheat oven to 400 degrees F. Combine the tomatoes, garlic, red onion, vinegar, sugar, salt, pepper, and cinnamon. Place onto a baking sheet. Drizzle with olive oil. Roast for 15 minutes. Stir in the parsley and roast another 5 minutes. Remove from oven and coarsely mash. Set aside.

Step 2For the tuna, pat the steaks dry and season with salt and pepper. Place a cast iron pan on the stove. Once it starts to smoke, add the olive oil. Sear the tuna for 4 minutes on one side. Turn tuna and add the butter and rosemary sprigs. Baste the tuna with the butter for 4 more minutes. Remove from pan and let rest 5 minutes.
