Ingredients

  • ROASTED TOMATO JAM
  • 2 pints multi colored grape tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup chopped red onion
  • 4 teaspoons balsamic vinegar
  • 5 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cinnamon
  • drizzle olive oil
  • 1 tablespoon fresh parsley, chopped
  • TUNA
  • 2 tuna steaks (6 oz each)
  • salt and pepper
  • 1 tablespoon olive oil
  • 4 tablespoons butter
  • 2 sprigs rosemary

How To Make seared tuna with roasted grape tomato jam

  • Step 1
    To make the tomato jam, preheat oven to 400 degrees F. Combine the tomatoes, garlic, red onion, vinegar, sugar, salt, pepper, and cinnamon. Place onto a baking sheet. Drizzle with olive oil. Roast for 15 minutes. Stir in the parsley and roast another 5 minutes. Remove from oven and coarsely mash. Set aside.
  • Step 2
    For the tuna, pat the steaks dry and season with salt and pepper. Place a cast iron pan on the stove. Once it starts to smoke, add the olive oil. Sear the tuna for 4 minutes on one side. Turn tuna and add the butter and rosemary sprigs. Baste the tuna with the butter for 4 more minutes. Remove from pan and let rest 5 minutes.
  • Step 3
    Serve with the tomato jam.
