Ingredients

  • FOR THE SAUCE
  • 4 cups fresh squeezed mandarin orange juice
  • 1 tablespoon ancho chili powder
  • zest and juice of 1 lime
  • 6 tablespoons butter sliced into pieces
  • SCALLOPS
  • 20 large sea scallops patted dry
  • salt and pepper
  • olive oil for searing

How To Make seared sea scallops in spicy mandarin orange sauce

  • Step 1
    For the sauce Bring the orange juice, ancho chile powder and zest and juice of 1 lime to a boil over high heat. Reduce heat to simmer and simmer for 1 hour until thicken and syrupy. Remove from heat and whisk in butter 1 slice at at time until melted. Set aside and keep warm.
  • Step 2
    In a large skillet add the oil and get it hot. Season the scallops with salt and pepper. Sear the scallops in batches until golden on outside. About 2 minutes each side.
  • Step 3
    Serve with sauce
