Ingredients
- FOR THE SAUCE
- 4 cups fresh squeezed mandarin orange juice
- 1 tablespoon ancho chili powder
- zest and juice of 1 lime
- 6 tablespoons butter sliced into pieces
- SCALLOPS
- 20 large sea scallops patted dry
- salt and pepper
- olive oil for searing
How To Make seared sea scallops in spicy mandarin orange sauce

Step 1For the sauce Bring the orange juice, ancho chile powder and zest and juice of 1 lime to a boil over high heat. Reduce heat to simmer and simmer for 1 hour until thicken and syrupy. Remove from heat and whisk in butter 1 slice at at time until melted. Set aside and keep warm.

Step 2In a large skillet add the oil and get it hot. Season the scallops with salt and pepper. Sear the scallops in batches until golden on outside. About 2 minutes each side.

Step 3Serve with sauce
