- ONION JAM
- 1 tablespoon olive oil
- 2 cups sliced onions
- 2 tablespoons sugar
- 2 tablespoons each balsamic vinegar, red wine, & water
- SCALLOPS
- 24 sea scallops
- salt
- oil for searing
How To Make seared scallops with onion jam

Step 1Onion Jam Add oil to a large skillet. Add the onion and cook over medium heat until translucent about 8 minutes. Add the sugar and cook stirring ocassionally for 20 minutes. Add the remaining ingredients and cook 20 more minutes until jam like stirring frequently.

Step 2For the Scallops Season the scallops with salt. Add the oil to a large skillet and sear the scallops in batches until golden on each side about 2 minutes per side. Serve with onion jam.
