Ingredients

  • ONION JAM
  • 1 tablespoon olive oil
  • 2 cups sliced onions
  • 2 tablespoons sugar
  • 2 tablespoons each balsamic vinegar, red wine, & water
  • SCALLOPS
  • 24 sea scallops
  • salt
  • oil for searing

How To Make seared scallops with onion jam

  • Step 1
    Onion Jam Add oil to a large skillet. Add the onion and cook over medium heat until translucent about 8 minutes. Add the sugar and cook stirring ocassionally for 20 minutes. Add the remaining ingredients and cook 20 more minutes until jam like stirring frequently.
  • Step 2
    For the Scallops Season the scallops with salt. Add the oil to a large skillet and sear the scallops in batches until golden on each side about 2 minutes per side. Serve with onion jam.
