Ingredients
- 12 large scallops patted dry
- 1 1/2 cups frozen peas thawed
- 1 cup frozen edamame thawed
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup fresh mint chopped
How To Make seared scallops with minted peas and edamame

Step 1Season the scallops with salt and pepper and set aside at room temp.

Step 2Bring a pan of salted water to a boil. Add the peas and edamame and cook 4 minutes. Drain and set aside.

Step 3Add olive oil to a skillet and sear the scallops 2 minutes per side depending on how thick they are. Remove to a warm plate.

Step 4Add the butter to the pan and add the peas, and edamame back into the pan and add the mint.

Step 5Cook 1 minute. Serve the peas with the scallops.
