Ingredients

  • 12 large scallops patted dry
  • 1 1/2 cups frozen peas thawed
  • 1 cup frozen edamame thawed
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup fresh mint chopped

How To Make seared scallops with minted peas and edamame

  • Step 1
    Season the scallops with salt and pepper and set aside at room temp.
  • Step 2
    Bring a pan of salted water to a boil. Add the peas and edamame and cook 4 minutes. Drain and set aside.
  • Step 3
    Add olive oil to a skillet and sear the scallops 2 minutes per side depending on how thick they are. Remove to a warm plate.
  • Step 4
    Add the butter to the pan and add the peas, and edamame back into the pan and add the mint.
  • Step 5
    Cook 1 minute. Serve the peas with the scallops.
