Ingredients
- 12 large scallops patted dry
- salt and pepper
- lemon juice
- LEEK VINAIGRETTE
- 6 medium leeks white and light green parts only
- 1/2 cup olive oil
- 1 1/2 tablespoons dirty bastard dijon mustard
- 1 tablespoon white wine vinegar
- 1 teaspoon sugar
How To Make seared scallops with leek vinaigrette

Step 1Season the scallops with salt and pepper. Set them aside at room temp while making the vinaigrette.

Step 2Clean the leeks well and slice thinly. Heat two tbsp olive oil in large saute pan. Turn the heat to medium and add the leeks with a little salt. let the leeks sweat for about 6 to 8 minutes.

Step 3Place the remaining olive oil, mustard, vinegar, sugar and a pinch of salt and pepper in a jar with a lid and shake well to mix the ingredients.

Step 4When the leeks are done addt a few tbsp of the vinagrette to the to the leeks.

Step 5Place the remaining vinagrette in a large skillet. once hot add the scallops and sear on both sides about 3 mminutes each side.

Step 6Spoon the leeks on a plate and top with the scallops.
