Ingredients

  • 12 large scallops patted dry
  • salt and pepper
  • 1/4 cup olive oil, extra virgin
  • COWBOY BUTTER
  • 6 tablespoons melted butter
  • juice and zest of 1/2 a lemon
  • 4 cloves garlic minced
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh parsley minced
  • 1 tablespoon fresh chives minced
  • 2 teaspoons fresh thyme minced

How To Make seared scallops with cowboy butter

  • Step 1
    To make the cowboy butter. Mix the melted butter, lemon juice and zest, garlic, mustard, and paprika. Whisk until combined. Stir in the parsley, chives and thyme. Set aside.
  • Step 2
    Season the scallops with salt and pepper. Add the olive oil to a large skillet. Heat unti smoking. Sear the scallops in batches for about 3 minutes per side.
  • Step 3
    Serve the scallops drizzled with Cowboy butter.
