Ingredients
- 12 large scallops patted dry
- salt and pepper
- 1/4 cup olive oil, extra virgin
- COWBOY BUTTER
- 6 tablespoons melted butter
- juice and zest of 1/2 a lemon
- 4 cloves garlic minced
- 1 tablespoon dijon mustard
- 1/4 teaspoon paprika
- 2 tablespoons fresh parsley minced
- 1 tablespoon fresh chives minced
- 2 teaspoons fresh thyme minced
How To Make seared scallops with cowboy butter

Step 1To make the cowboy butter. Mix the melted butter, lemon juice and zest, garlic, mustard, and paprika. Whisk until combined. Stir in the parsley, chives and thyme. Set aside.

Step 2Season the scallops with salt and pepper. Add the olive oil to a large skillet. Heat unti smoking. Sear the scallops in batches for about 3 minutes per side.

Step 3Serve the scallops drizzled with Cowboy butter.
