Ingredients
- AVOCADO CREAM
- 1 avocado
- 1/3 cup olive oil
- zest of 1 lime
- 1 tablespoon lime juice
- 1/2 cup each vegetable broth and fresh parsley
- 2 cloves garlic
- salt and pepper
- 12 large sea scallops
- 1/4 cup olive oil
How To Make seared scallops in avocado cream

Step 1Peel the Avocado and remove the pit. Place in food processor with the 1/3 cup olive oil, lime zest & juice, broth, parsley, garlic, salt & pepper. Process until smooth

Step 2Place the 1/4 cup olive oil in skillet. Pat the scallops dry and season with salt & pepper. When the oil starts to smoke. Sear the scallops on each side for about 2 or 3 minutes.

Step 3Serve with the Avocado cream
