Ingredients For seared scallops in avocado cream

  • AVOCADO CREAM
  • 1
    avocado
  • 1/3 c
    olive oil
  • zest of 1 lime
  • 1 Tbsp
    lime juice
  • 1/2 c
    each vegetable broth and fresh parsley
  • 2 clove
    garlic
  • salt and pepper
  • 12 lg
    sea scallops
  • 1/4 c
    olive oil

How To Make seared scallops in avocado cream

    Peel the Avocado and remove the pit. Place in food processor with the 1/3 cup olive oil, lime zest & juice, broth, parsley, garlic, salt & pepper. Process until smooth
  • 2
    Place the 1/4 cup olive oil in skillet. Pat the scallops dry and season with salt & pepper. When the oil starts to smoke. Sear the scallops on each side for about 2 or 3 minutes.

    Serve with the Avocado cream
