Ingredients
- FOR THE SCALLOPS
- 8 medium scallops
- salt and pepper
- 3 tablespoons butter
- GARLIC CHIVE SAUCE
- 2 cloves garlic minced
- 3 tablespoons finely chopped chives
- 2 tablespoons hot water
- 2 teaspoons lime juice
- 1 teaspoon fish sauce
- salt & white pepper
How To Make seared scallops in a garlic chive sauce

Step 1Make the sauce. Add the garlic, chives, hot water, lime juice and fish sauce in a small saucepan. Cook over med high heat for 3 minutes. Taste and adjust for salt and white pepper. Set aside.

Step 2for the scallops Add the butter to a skillet. Pat the scallops dry and season with salt and pepper

Step 3When the butter is hot add the scallops and sear for about 4 or 5 minutes per side to get a good crust.

Step 4Arrange on a plate and top with sauce.
