Ingredients

  • FOR THE SCALLOPS
  • 8 medium scallops
  • salt and pepper
  • 3 tablespoons butter
  • GARLIC CHIVE SAUCE
  • 2 cloves garlic minced
  • 3 tablespoons finely chopped chives
  • 2 tablespoons hot water
  • 2 teaspoons lime juice
  • 1 teaspoon fish sauce
  • salt & white pepper

How To Make seared scallops in a garlic chive sauce

  • Step 1
    Make the sauce. Add the garlic, chives, hot water, lime juice and fish sauce in a small saucepan. Cook over med high heat for 3 minutes. Taste and adjust for salt and white pepper. Set aside.
  • Step 2
    for the scallops Add the butter to a skillet. Pat the scallops dry and season with salt and pepper
  • Step 3
    When the butter is hot add the scallops and sear for about 4 or 5 minutes per side to get a good crust.
  • Step 4
    Arrange on a plate and top with sauce.
