This was one of my kids favorite lunches when they were growing up.

Ingredients

  • 1 (6 oz.) can lump crab meat, drained and flaked
  • 1 (4 oz.) can tiny shrimp, drained
  • 1/4 cup cooked, chopped scallops
  • 1/3 cup mayonnaise
  • 2 tablespoons cucumber dressing
  • 1 stalk celery, chopped finely
  • 1 small carrot, shredded
  • 4 - ripe olives, finely chopped
  • 1 small roma tomato, chopped
  • 1/4 cup chopped cucumber
  • - green leaf lettuce
  • 4 - pita poclets

How To Make seafood salad

  • Step 1
    In a bowl, combine all ingredients except pita pockets and lettuce.
  • Step 2
    Line each pita with a lettuce leaf.
  • Step 3
    Spoon seafood mixture, divided evenly, into each pocket.
