Ingredients
- 4 6 oz. sea bass fillets
- salt and pepper
- 1 cup dry white wine
- 1 cup chicken broth
- 1 small shallot minced
- 2 cloves garlic minced
- 5 tablespoons cold butter cut into squares
- 2 teaspoons fresh tarragon chopped
How To Make sea bass with tarragon butter sauce

Step 1Sprinkle fish with salt and pepper. Add a little oil to skillet. Cook the sea bass 2 minutes per side or until desired doneness. Remove from pan and keep warm.

Step 2Add the shallots and garlic to the pan cook 3 minutes. Add the wine and cook until most is reduced. Whisk in the butter one pat at time until each is melted. Stir in the tarragon. Taste and adjust for salt and pepper.

Step 3Serve the sauce over the fish fillets. Garnish with microgreens.
