- SALSA VERDE
- 1 small shallot, diced small
- 2 tablespoons lemon juice
- salt and pepper
- 1 cup mixed herbs (I used basil and cilantro)
- 1/2 cup olive oil
- SCALLOPS
- 6 large sea scallops
- oil
- salt and pepper
How To Make scallops with salsa verde

Step 1To make the salsa verde, mix the shallot with the lemon juice and set aside for 5 minutes. Mix in the remaining ingredients. Set aside to left the flavors meld.

Step 2Pat the scallops dry and season with salt and pepper. Heat the oil in a nonstick skillet. Sear the scallops about 3 minutes each side until browned well.

Step 3Serve the scallops with the salsa verde.
