Ingredients
- 16 medium scallops
- salt and pepper
- LIME HOLLANDAISE SAUCE
- 1 large egg yolk
- 1 tablespoon lime juice
- 2 ounces butter melted
- fresh chives chopped
How To Make scallops with lime hollandise sauce

Step 1Season the scallops with salt and pepper. Sear in olive oil about 3 minutes each side.

Step 2Place the egg yolk and lime juice in a food processor. With the food processor on drizzle the melted butter into the egg yolk mixture.

Step 3Spoon the Hollandaise sauce over each scallop and garnish with chives.
