Ingredients
- LEMON PESTO
- 2 cups fresh basil
- 2 cups garlic
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/4 cup each pine nuts & grated asiago cheese
- 1/3 cup olive oil
- salt and pepper
- SCALLOPS
- 1 1/2 pounds sea scallops
- 1 lemon halved
- 1/4 cup butter at room temp
- 1/4 cup lemon pesto
- 1/2 cup panko bread crumbs
How To Make scallops with lemon pesto crumbs

Step 1For the lemon pesto place all ingredients except olive oil and salt and pepper in a food processor. Process drizzling in the olive oil. Season with salt and pepper.

Step 2For the scallops Preheat oven 450 degrees. Lightly oil a baking sheet.

Step 3Place the scallops on the baking sheet and squeeze the lemon juice over all. Whisk the butter and pesto together then add Panko

Step 4Spoon the mixture on top of each scallop. Bake for about 10 minutes. Serve with lemon wedges.
