Ingredients For scallops with lemon pesto crumbs

  • 2 c
    fresh basil
  • 2 c
  • 1 Tbsp
    lemon zest
  • 2 Tbsp
    lemon juice
  • 1/4 c
    each pine nuts & grated asiago cheese
  • 1/3 c
    olive oil
  • salt and pepper
  • 1 1/2 lb
    sea scallops
  • 1
    lemon halved
  • 1/4 c
    butter at room temp
  • 1/4 c
    lemon pesto
  • 1/2 c
    panko bread crumbs

How To Make scallops with lemon pesto crumbs

  • 1
    For the lemon pesto place all ingredients except olive oil and salt and pepper in a food processor. Process drizzling in the olive oil. Season with salt and pepper.

    For the scallops Preheat oven 450 degrees. Lightly oil a baking sheet.
  • 3
    Place the scallops on the baking sheet and squeeze the lemon juice over all. Whisk the butter and pesto together then add Panko
  • 4
    Spoon the mixture on top of each scallop. Bake for about 10 minutes. Serve with lemon wedges.
