- 1 cup grated romano cheese
- 1/2 cup blanched almonds
- 5 cloves garlic

- 12 large scallops

How To Make scallops with cilantro almond pesto

Step 1For the Pesto Place all the ingredients except olive oil in a food processor With the processor going drizzle in the olive oil until desired consistency. Season with salt and Pepper

Step 2For the scallops Pat the scallops dry. Season with salt and Pepper.

Step 3Add about an inch of oil to a skillet. once it starts to smoke add the scallops and brown on each side about 3 minutes each side.

Step 4Plate the pesto on a serving plate and top with scallops.
