  • 2 cups fresh cilantro
  • 1 cup grated romano cheese
  • 1/2 cup blanched almonds
  • 5 cloves garlic
  • salt and pepper
  • olive oil
  • FOR THE SCALLOPS
  • 12 large scallops
  • olive oil
  • sat and pepper

How To Make scallops with cilantro almond pesto

  • Step 1
    For the Pesto Place all the ingredients except olive oil in a food processor With the processor going drizzle in the olive oil until desired consistency. Season with salt and Pepper
  • Step 2
    For the scallops Pat the scallops dry. Season with salt and Pepper.
  • Step 3
    Add about an inch of oil to a skillet. once it starts to smoke add the scallops and brown on each side about 3 minutes each side.
  • Step 4
    Plate the pesto on a serving plate and top with scallops.
