I love scallops. This blueberry sauce goes great with them.

Ingredients

  • 12 scallops
  • salt
  • 2 tablespoons olive oil
  • BLUEBERRY SAUCE
  • 2 cups chicken stock
  • 1 small onion, chopped
  • 1 Fuji apple, cored and chopped
  • 4 sprigs thyme
  • 2 cups blueberries
  • 1 tablespoon lemon juice
  • 3 tablespoons sugar
  • 3 tablespoons butter
  • chives

How To Make scallops with blueberry sauce

  • Step 1
    Add the chicken stock to a saucepan. Add the onion, apple, and thyme bundle. Let simmer for 20 minutes. Strain the chicken stock and discard the solids.
  • Step 2
    Add the blueberries, lemon juice, and sugar. Bring to a boil and simmer 20 minutes. Whisk in the butter.
  • Step 3
    Season the scallops with salt. Add oil to a skillet and get it hot. Sear the scallops on both sides about 2 1/2 minutes each side.
  • Step 4
    Serve over the blueberry sauce. Garnish with chives if desired.
