Ingredients
- 12 scallops
- salt
- 2 tablespoons olive oil
- BLUEBERRY SAUCE
- 2 cups chicken stock
- 1 small onion, chopped
- 1 Fuji apple, cored and chopped
- 4 sprigs thyme
- 2 cups blueberries
- 1 tablespoon lemon juice
- 3 tablespoons sugar
- 3 tablespoons butter

How To Make scallops with blueberry sauce

Step 1Add the chicken stock to a saucepan. Add the onion, apple, and thyme bundle. Let simmer for 20 minutes. Strain the chicken stock and discard the solids.

Step 2Add the blueberries, lemon juice, and sugar. Bring to a boil and simmer 20 minutes. Whisk in the butter.

Step 3Season the scallops with salt. Add oil to a skillet and get it hot. Sear the scallops on both sides about 2 1/2 minutes each side.

Step 4Serve over the blueberry sauce. Garnish with chives if desired.
