If you can't find blood orange olive oil you can use regular olive oil and add a little blood orange juice

Ingredients
- 24 sea scallops
- salt
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 cup blood orange olive oil
- 2 tablespoons red wine vinegar
- 2 tubes whole grain mustard
- 1 cup garlic
- 1 tablespoon sugar
- salt
How To Make scallops in blood orange mustard viniagrette

Step 1Pat the scallops dry and season with salt. Set aside.

Step 2Mix the blood orange olive oil, red wine vinegar, mustard, garlic and sugar together. Add salt to taste. Shake well and set aside

Step 3Add the olive oil and butter in a non stick skillet. Once hot sear the scallops for 2 minutes each side. Remove from pan to a paper towel. Arrange on plate and drizzle the viniagrette over top and add a cilantro leaf for garnish
