savory shrimp and grits

My family loves seafood. I usually would go to Whole Foods and enjoy a bowl Of shrimp and grits at their food counter which is now closed. Every ingredient works well together in this delicious dish. It is a must try that you will come back too over and over again.

Ingredients For savory shrimp and grits

  • 1 c
    quick cooking grits
  • 1 lb
    shrimp shelled
  • 1 c
    sun dried tomatoes
  • 1 c
    spinach, fresh
  • 3 c
    chicken stock
  • 3 Tbsp
    heavy cream
  • 3 Tbsp
    butter, unsalted
  • 4 slice
    bacon cut up
  • black pepper
  • 3
    scallions 2 for cooking 1 as garnish
  • 2
    garlic cloves
  • 3 Tbsp
    fresh lemon
  • 1 tsp
    paprika
  • 1 tsp
    worcestershire sauce
  • 1 Tbsp
    old bay seasoning

How To Make savory shrimp and grits

    In a medium saucepan, bring the stock to a boil.

    Whisk in the grits and cook over moderately high heat, stirring vigorously at first to eliminate lumps. Cook until thickened and the grains are tender- about 4 - 5 minutes total. Add the cream, butter and gently stir. Cover and remove from heat.

    In a large skillet, cook the bacon over medium-high heat until crispy. Transfer cooked bacon to paper towel-lined plate. Pour out all but about 4 tablespoons of bacon fat in the skillet and re-heat.

    Sprinkle old bay and black pepper all over the shrimp and then add to the hot skillet and cook until curled and pink. Stir in the garlic, tomatoes, spinach, scallions, paprika, Worcestershire, and lemon juice.

    Crumble the bacon into slightly smaller pieces, set aside. Spoon the warm grits into a bowl and top with a quarter of the shrimp mixture. Garnish with bacon and reserved scallions. Enjoy!
