Ingredients
- 12 medium scallop patted dry
- salt and pepper
- 2 tablespoons olive oil
- 4 ounces proscuitto chopped into pieces
- 2 tablespoons balsamic vinegar
- 2 cups fresh spinach
- 2 tablespoons lemon juice
How To Make sauteed scallops with spinach and procuitto

Step 1First cook the scallops. Season the scallops with salt and pepper. Sear the scallops in the olive oil then transfer to a plate.

Step 2In the same pan add the proscuitto and cook 3 minutes. add the balsamic vinegar and continue to cook 2 more minutes. Add the spinach and lemon juice. Cook until spinach wilts.

Step 3Place the spinach and proscuitto on a plate. Top with scallops and pour some pan juices over the scallops
