Ingredients
- SALMON AND GLAZE
- 4 - skinless salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 4 cloves garlic minced
- 1 tablespoon toasted sesame oil
- 1/4 cup dark brown sugar
- NOODLES
- 8 ounces rice noodles
- - juice of 1 lime
- 3 tablespoons brown sugar
- 4 tablespoons soy sauce
- 1/2 cup shiitake mushroom sliced
- 1 tablespoon ginger grated
- 2 tablespoons tamarind paste
- 1 cup spinach
- 2 - red chili seeded and chopped
- 6 - scallions chopped
How To Make salmon with thai chili lime noodles

Step 1Cook the rice noodles according to directions. Drain and rinse under cold water. Mix the brown sugar, soy sauce, ginger , lime and tamarind paste together and set aside. Place oil in large skillet and add the mushrooms and cook a couple of minutes. Add the chilies. Cook 1 minutes. Pour over the sauce mix. Bring it to a boil and reduce heat to a simmer. Add in the green onions, and spinach. Cook 30 seconds. Stir in the noodles and cook until noodles are warmed through.

Step 2Place the olive oil in a large frying pan over medium high heat. Sear the Salmon on each side about 3 minutes each. remove from pan. Mix the garlic, soy sauce, sesame oil and brown sugar together. Pour into pan and bring to a boil. Add the salmon back in pan and baste the glaze over the salmon. Reduce the heat to low and let cook 2 more minutes.

Step 3Serve the Salmon over the noodles and garnish with some green onions.
