One of the best Asian Salmon dishes I have ever made.

Ingredients

  • SALMON AND GLAZE

  • 4
    skinless salmon fillets
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    soy sauce
  • 4 clove
    garlic minced
  • 1 Tbsp
    toasted sesame oil
  • 1/4 c
    dark brown sugar
  • NOODLES

  • 8 oz
    rice noodles
  • ·
    juice of 1 lime
  • 3 Tbsp
    brown sugar
  • 4 Tbsp
    soy sauce
  • 1/2 c
    shiitake mushroom sliced
  • 1 Tbsp
    ginger grated
  • 2 Tbsp
    tamarind paste
  • 1 c
    spinach
  • 2
    red chili seeded and chopped
  • 6
    scallions chopped

How to Make Salmon with Thai Chili Lime Noodles

Step-by-Step

  1. Cook the rice noodles according to directions. Drain and rinse under cold water. Mix the brown sugar, soy sauce, ginger , lime and tamarind paste together and set aside. Place oil in large skillet and add the mushrooms and cook a couple of minutes. Add the chilies. Cook 1 minutes. Pour over the sauce mix. Bring it to a boil and reduce heat to a simmer. Add in the green onions, and spinach. Cook 30 seconds. Stir in the noodles and cook until noodles are warmed through.
  2. Place the olive oil in a large frying pan over medium high heat. Sear the Salmon on each side about 3 minutes each. remove from pan. Mix the garlic, soy sauce, sesame oil and brown sugar together. Pour into pan and bring to a boil. Add the salmon back in pan and baste the glaze over the salmon. Reduce the heat to low and let cook 2 more minutes.
  3. Serve the Salmon over the noodles and garnish with some green onions.
