Ingredients
- SALSA
- 1 - mango peeled and diced
- 2 tablespoons lime juice
- 2 tablespoons red bell pepper & ancho chili pepper jam
- 2 cloves garlic minced
- 1/4 cup cilantro chopped
- SALMON
- 4 - salmon fillets
- 2 tablespoons oil
- - salt and pepper
How To Make salmon with spicy mango salsa

Step 1Mix all ingredients for the salsa together and refrigerate for at least 30 minutes.

Step 2Place a large skillet over high heat and get it hot. Add the oil and let it warm 1 minute.

Step 3Season the salmon with salt and pepper.Lay the salmon skin side down in the hot pan and let sit without moving it around for at least 2 minutes to get the skin crispy. Turn the salmon over and get it nice and brown on the other side. Flip the salmon two more times then remove from heat cover and let sit for 2 or 3 more minutes until no longer pink in middle.

Step 4Serve the mango salsa over the cooked salmon
