Ingredients
- 4 portions of salmon
- 2 tablespoons olive oil
- 1/4 cup each fresh lemon juice and white wine vinegar
- 1 tablespoon shallot minced
- 2 cloves garlic minced
- 6 ounces jar creme fraiche
- 6 tablespoons cold butter cut into chunks
- salt and pepper to taste
- fresh parsley for garnish
How To Make salmon in creamy lemony butter sauce

Step 1Preheat oven 350 degrees. Place a large skillet on stove top. Cast Iron works best. Get it hot then add the oil. Wait a minutes then add the salmon skin side down. Place another pan on top to hold the pieces against the pan. Sear about 3 minutes. Turn the pieces and transfer the pan to the oven. Bake until done about 6 minutes.

Step 2Meanwhile add the lemon juice, vinegar, shallot and garlic to a small sauce pan. Bring to a boil and boil for about 5 minutes to reduce. Add the creme fraiche and reduce heat to a simmer. and simmer 1 minute.

Step 3Add the butter one piece at a time whisking constantly until melted. Repeat until all butter is used then remove from heat. Taste and adjust for salt and pepper

Step 4Place the sauce on a plate and arrange the Salmon skin side up on the sauce. Garnish with parsley. Pass extra sauce with Salmon
