Ingredients
- 1 1/2 pounds skinless, boneless salmon, divided and cut into big pieces (750 g)
- 1 tablespoon freshly squeezed lemon juice
- 1/2 tablespoon Dijon mustard
- 1/2 cup Panko bread crumbs
- 2 tablespoons finely chopped shallots
- 1 1/2 tablespoons chopped dill
- 1 tablespoon capers, drained, rinsed and finely chopped
- 1 teaspoon hot sauce, such as Cholula or Valentina
- 1 teaspoon Old Bay seasoning
- 1 teaspoon ground Himalayan pink salt, or to taste
- 1 teaspoon freshly ground black pepper, or to tase
- 2 tablespoons canola oil, or as needed to grease the bbq grates
- 4 large brioche buns or hamburger buns
- 4 slices Havarti cheese (optional)
- 1 cup tartar sauce, or as needed
- 4 large leaves Boston lettuce, washed and drained
- 4 slices tomato
- 1/2 cup red onions, sliced into rings
How To Make salmon burgers

Step 1In the bowl of a food processor, add 1/3 (250 g) salmon pieces, lemon juice, and mustard. Process until the mixture turns into a paste, scraping the sides and bottom as needed.

Step 2Add the remaining 2/3 (500 g) salmon pieces and pulse until just combined with little chunks of fish of about 1/4-inch in size – don’t overdo it.

Step 3Transfer salmon mixture to a large bowl. Add bread crumbs, shallots, dill, capers, hot sauce, Old Bay seasoning, salt, and pepper. Mix until evenly combined.

Step 4Shape the mixture into 4 patties. Place on a plate, cover with plastic wrap, and transfer to the fridge for 2 to 5 hours.

Step 5Preheat grill to 450 degrees to 500 degrees F and bring patties to room temperature.

Step 6Generously grease grates with canola oil using tongs holding paper towels. Place patties, close lid, and grill for 4 minutes per side.

Step 7Two minutes before the end of cooking, place the brioche buns on the top rack and cheese slices on the patties.

Step 8To assemble… Spread tartar sauce on the bottom and tops of buns. Place lettuce on the bottom buns, then salmon patties, followed by a slice of tomato and onion rings. Place the top buns and enjoy!
