I love this tuna noodle casserole because the sauce is made from scratch. I really try my best to watch sodium intake so when possible homemade sauce wins out.

Ingredients For rustic tuna noodle casserole

  • PREPARE NOODLES ACCORDING TO PACKAGE DIRECTIONS
  • 1 lb
    egg noodles, cooked
  • IN A MEDIUM SIZE SAUCE PAN
  • 4 Tbsp
    butter
  • 1/4 c
    flour
  • 2 1/2 c
    whole milk
  • 3/4 c
    white wine
  • 1/3 oz
    parmesan
  • 1 - 2 pinch
    salt & pepper
  • 3/4 c
    sharp yellow or white cheddar (1/4 cup for the top)

    onion, diced
  • 2-4 md
    garlic, finely chopped
  • 1 pt
    whole mushrooms, sliced or chopped
  • 1 1/2 Tbsp
    basil, chopped
  • 3 - 4 can
    albacore tuna
  • 1 1/2 c
    bread crumbs
  • 1 c
    fresh peas or frozen

How To Make rustic tuna noodle casserole

    Cook egg noodles according to the package. Drain, put a little oil on them and set aside.

    Saute' your onions, mushrooms and garlic in some butter. For about 10 minutes or so.

    In a medium saucepan melt your butter. Add flour, which will make a paste like consistency. Cook for 2 minutes while whisking continually. Slowly add your milk while continuing to stir. Add wine and cook for another couple of minutes. Remove from heat and add the Parm and cheddar cheese along with your seasoning of salt & pepper. (Save 1/4 cup of cheddar cheese to sprinkle on the top before baking.)

    Open the cans of tuna and drain the water. Mix the tuna into the noodles and the peas. Next add a cup of breadcrumbs into the mixture and then pour your sauce over the top and fold into the noodles.

    Pour mixture into iron skillet and sprinkle the 1/2 cup bread crumbs on the top along with the 1/4 cup of shredded cheese. Place in the oven.

    Bake 30 to 35 minutes and remove from oven. Let stand 5 to 10 minutes before serving.

    Remove and serve up the hot tuna casserole.
