These rum-glazed shrimp make a great accompaniment to some Cuban black beans and rice and a side of plantains. The shrimp may also be broiled.

Ingredients

  • 2 1/2 pounds fresh shrimp, large (peeled with tails intact)
  • 6 tablespoons rum (gold preferred)
  • 2 tablespoons fresh lemon or lime juice
  • 2 tablespoons vegetable oil or olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup packed dark brown sugar
  • 1 tablespoon cider vinegar

How To Make rum-glazed shrimp

  • Step 1
    Peel shrimp, leaving tails intact. Place shrimp in a bowl with 4 tbsp. rum along with lemon or lime juice, oil, garlic, salt, pepper; toss to coat thoroughly. Cover and marinate in the fridge for up to 1 hour.
  • Step 2
    Combine brown sugar, vinegar, and remaining 2 tbsp. rum. Thread shrimp onto skewers and lightly brush with brown sugar glaze.
  • Step 3
    Grill over medium hot fire, brushing with additional glaze until shrimp are opaque, about 3 minutes on each side or until done.
