- 1 tablespoon scallions, chopped
- NOODLE SALAD
- 4 ounces glass noodles, cooked according to package directions, drained and run under cold water
- 10 prawns, cooked, peeled, and cooled
- 1/2 red bell pepper, chopped
- 1/2 cucumber, cut into strips
- 1/2 cup shredded carrots
- 1 cup red cabbage, chopped
- 1 cup cherry tomatoes, sliced
- 1 small shallot, diced
- cilantro, for garnish
- cashews, for garnish
