  • 1 tablespoon rice vinegar
  • 2 tablespoons fish sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 teaspoon grated ginger
  • 1 stalk lemongrass, chopped
  • 1/2 freshno chili, seeded and minced
  • 1 tablespoon scallions, chopped
  • NOODLE SALAD
  • 4 ounces glass noodles, cooked according to package directions, drained and run under cold water
  • 10 prawns, cooked, peeled, and cooled
  • 1/2 red bell pepper, chopped
  • 1/2 cucumber, cut into strips
  • 1/2 cup shredded carrots
  • 1 cup red cabbage, chopped
  • 1 cup cherry tomatoes, sliced
  • 1 small shallot, diced
  • cilantro, for garnish
  • cashews, for garnish

How To Make prawn glass noodle salad

  • Step 1
    Mix the dressing ingredients together and set aside.
  • Step 2
    Mix the ingredients for the noodle salad together and then stir in the dressing.
