Ingredients
- 1 tablespoon shallots minced
- 1 bay leaf
- 1/2 cup dry white wine
- 3 tablespoons creme fraiche
- 2 teaspoons each lemon juice and fresh dill chopped
- 1 teaspoon whole grain mustard
- 1/2 teaspoon salt
- 1/4 cup panko bread crumbs
- 1/4 cup shelled pistachios
- 2 large tuna steaks
- 1 tablespoon olive oil
How To Make pistachio-crusted tuna steaks

Step 1Place shallot, bay leaf and wine in a small saucepan and bring to a boil. Reduce until the wine is almost evaporated. About 5 minutes.

Step 2Transfer to a bowl. Add the creme fraiche, lemon juice, dill, mustard and half of the salt. Process until finely ground. Transfer to a shallow plate

Step 3Dredge the tuna steaks in the pistachio mixture on both sides. Add the oil to a large skillet. Cook the tuna for about 5 minutes per side for medium rare. Serve with lemon dill sauce
