perusina stuffed crab dressing (1 qt.)
This recipe comes from my grandfather, Joe Bonario and his partner Jimmy Perusina restaurant in Galveston, TX., This was the chef's recipe, Fidel Romantal's of Perusina Cafe. I believe they were open from the 40's thru the mid 60's. My grandfather was a great cook and made all game meat taste delis. I hope you enjoy.

Ingredients
- 1 - onion
- 1-2 stalk celery
- 1 small parsley, italian bunch
- 1 - bell peppers
- 3 ounces fresh garlic
- 8 large dry bay leaves
- 1 stick pure butter
- 2 - chicken base or bullion cubes
- 3 tablespoons spanish pimentos chopped fine
- 3 tablespoons gumbo file, full to brim
- 1 cup saltine crackers (unsure of amount)
- 1/2 tablespoon salt and pepper (opt)
How To Make perusina stuffed crab dressing (1 qt.)

Step 1Grind first 6 ingredients together. Add one stick of pure butter (no water). Simmer for one hour, very slow and low. Mix often and cover.

Step 2Take off the heat. Add chicken bullion, pimentos, gumbo file. Mix till chicken bullion melted, add saltine cracker crumbs. salt/pepper opt. Mix till it is a paste.

Step 3Use 1/2 cup of this dressing for 1LB. fresh lump crab meat. Recipe by Fidel Romantal
