pasta with clam sauce
This is an old Italian recipe from my wife. She got it from her brother-in-law's mother, who came here from Sicily. My wife has made it for years, and now I have learned to cook the recipes. We just love this quick and easy recipe. Goes good with White Wine and garlic bread. I add some freshly grated Parm to mine at the table.

Ingredients
- 3 cans clams, chopped
- 1 tablespoon chopped garlic, in olive oil
- 3 ounces white wine (Pinot Grigio)
- 1 box linguine, cooked
- 3 dashes red pepper flakes
- 1 dash basil, fresh
- 1 tablespoon corn starch
How To Make pasta with clam sauce
-
Step 1Strain the claims in a bowl, keeping the juice and clams separate.
-
Step 2Start water in an additional pan for the pasta to cook. Cook pasta according to package directions.
-
Step 3In a large pan add the garlic and a stick of unsalted butter. Saute the ingredients until soft.
-
Step 4Add clam juice from the cans after separating the clams and juice. Add white wine, I use approximately 1" from the bottle. Add red pepper flakes to your taste. Let simmer until the wine is cooked off.
-
Step 5Add the claims after the wine has cooked, and then add 1 tablespoon of corn starch and cook until thickened.
-
Step 6Once the sauce has thickened (still watery), add the cooked pasta to the mix and fold together. Serve and enjoy.
-
Step 7The mix should serve four easily. And the leftovers are even better the next day.
