Ingredients For panko-crusted lobster cakes

3/4 lbminced lobster meat

2 Tbspmayonnaise

2 Tbspgreen onions, finely diced

2 Tbsproasted red peppers, finely diced

2 Tbspcelery, finely diced

1 lgfree-range egg, beaten
-
1 Tbspfreshly squeezed lemon juice
-
1/2 tspmild paprika
-
1/4 tspdried tarragon
-
1/4 tspground Himalayan pink salt, or to taste
-
1/4 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)

1/8 tspOld Bay seasoning
-
1 1/4 cPanko bread crumbs, divided
-
1/4 ccanola oil
-
2 Tbspclarified butter
-
4 lglemon wedges, for serving
How To Make panko-crusted lobster cakes

1In a bowl, combine the lobster meat, mayo, green onions, roasted red peppers, celery, egg, lemon juice, paprika, tarragon, salt, pepper, and Old Bay seasoning; stir to blend.

2Add 3/4 cup bread crumbs and mix well.

3Form 4 patties. If the mixture is wet, gently squeeze the liquid between your hands while forming the patty until it’s mostly out.

4Place them on a plate. Cover with plastic wrap and transfer to the fridge for 6 to 8 hours.

5In a shallow dish, add the remaining 1/2 cup bread crumbs. Working with one at a time, coat the patty very well, pressing down on the crumbs to adhere and shaking off any excess. Set aside while working with the others.

6In a skillet over medium-high heat, add oil and clarified butter. When hot, place the cakes in the pan, pressing down on top gently. Cook for 3 to 4 minutes per side or until golden brown.

7Serve with Rémoulade, aioli, Russian dressing, or Thousand Island dressing.
