Ingredients
- 1 quart oyster meat, rinsed and drained well
- 1/3 cup olive oil
- 2 cloves garlic, finely minced
- 1/3 cup fresh parsley, chopped
- 2 cups italian breadcrumbs (i make my own)
- 1/4 cup lime or lemon juice
- 6 spring onions, sliced, white and green
- 1/3 cup parmesan cheese, grated
How To Make oyster casserole

Step 1Preheat your oven to 200 C (400 F). Grease a 9x13 baking dish with butter.

Step 2Here is the oyster meat, in brine, from local fishermen, and they deliver as well. Each bag has 2 cups of oyster meat, drained.

Step 3In a mixing bowl, add the olive oil, garlic, parsley, breadcrumbs, and lime or lemon juice, mix together.

Step 4Add the oysters to the dish and spread out to an even layer.

Step 5Spread the breadcrumb mixture evenly over the oysters.

Step 6Sprinkle on the cheese.

Step 7Sprinkle on the spring onion.

Step 8Bake for 25-30 minutes or until the topping browned.

Step 9Serve with a side or two of your choice. Enjoy.
