Aspic is a cold served, molded meal. This one has shrimp, which I unfortunately can't eat!

Ingredients For low-cal shrimp aspic, mom's

  • 16 oz
    tomato sauce
  • 1 Tbsp
    unflavored gelatin
  • 1/4 c
    cold water
  • 1 clove
    low calorie ginger ale
  • 1 tsp
    lemon juice
  • 4 1/2 oz
    canned shrimp, drained
  • 1/2 c
    diced cucumber

How To Make low-cal shrimp aspic, mom's

  • 1
    Heat tomato sauce to boiling. soften gelatin in water, add to tomato sauce and stir until dissolved. Remove from heat and stir in ginger ale and lemon juice. Chill until partially set then fold in shrimp and cucumber. Pour into 1 quart mold and chill until firm.
