Ingredients

  • 1/3 cup sherry vinegar
  • 1 tablespoon spicy brown mustard
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • various fresh herbs. i use rosemary, basil, and thyme
  • 2 6 oz tuna steaks
  • pea shoots for garnish

How To Make honey mustard tuna steaks

  • Step 1
    Mix all the ingredients together except the tuna. Place in a baggie or flat bowl and then add the tuna. Let marinate 30 minutes. Turning the tuna a few times.
  • Step 2
    Remove the tuna from the marinade. Place the marinade in a saucepan and bring to a boil and let reduce to 1/4 cup. Strain through fine mesh strainer.
  • Step 3
    Sear the tuna in a cast iron pan or grill in some oil. Sear about 3 minutes each side then edges. Remove from pan slice drizzle the marinade reduction over and garnish with the pea shoots
