- 12 ounces package farfalle noodles
- 2 tablespoons plus 1 teaspoon extra virgin olive oil, divided
- 8 ounces sliced baby bella mushrooms
- 1/2 cup frozen corn niblets, thawed
- 1/2 cup sliced celery
- 1/2 cup diced red pepper
- 1 large shallot, finely diced
- 1 medium garlic clove, minced
- 8 ounces frozen 26-30 count raw shrimp, thawed and peeled
- 1/4 cup cornstarch
- 1/2 cup clam juice
- 1 1/2 cups heavy cream
- 1 teaspoon seafood seasoning
- 1 teaspoon dried basil leaves
- 1/2 cup freshly grated parmesan cheese
How To Make heavenly shrimp and vegetable farfalle

Step 1Cook farfalle noodles for 11 minutes in boiling water according to package directions. Drain off water. Stir 1 teaspoon olive oil into noodles. Cover and keep warm.

Step 2Heat remaining olive oil in a 10-inch non-stick skillet over medium heat. Add mushrooms, corn, celery, red pepper, shallot and garlic. Cook and stir for 2 minutes.

Step 3Add shrimp. Cook and stir until shrimp is almost fully cooked.

Step 4In a small bowl, whisk cornstarch into clam juice; stir into shrimp mixture along with the cream, seafood seasoning and basil leaves. Cook and stir over medium heat until mixture is hot and thickened. Remove from heat.

Step 5Place farfalle noodles onto serving plates. Generously top with sauce. Sprinkle with Parmesan cheese.
