garlicky shrimp and spinach stir-fry
I adapted a recipe from my health insurance company's magazine and added extra veggies. Also, if you have access to lemon-infused olive oil, try it!

Ingredients
- 1 tablespoon olive oil
- 3 cloves garlic, sliced
- 1/2 pound shrimp, peeled and de-veined
- 1/2 cup red or orange pepper, diced
- 1/2 cup onion, diced
- 1 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 5 ounces spinach, rinsed
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon parsley, minced
- salt and pepper, to taste
How To Make garlicky shrimp and spinach stir-fry

Step 1Heat oil in large skillet or wok. Add garlic and cook until starting to brown, remove with slotted spoon and set aside. Add onion and red pepper to wok and cook until slightly softened.

Step 2Add shrimp, paprika and optional red pepper flakes. Cook for a few minutes, until shrimp have turned pink.

Step 3Stir in spinach by handfuls as it wilts. Add garlic back to pan, stir in lemon juice, season to taste with salt and pepper. Sprinkle with lemon zest and parsley before serving.
