Garlicky Shrimp and Spinach Stir-fry

Ingredients

1 Tbspolive oil

3 clovegarlic, sliced

1/2 lbshrimp, peeled and de-veined

1/2 cred or orange pepper, diced

1/2 conion, diced

1 tspsmoked paprika
-
1/4 tspred pepper flakes (optional)

5 ozspinach, rinsed
-
1 Tbsplemon juice
-
1 tsplemon zest
-
1 Tbspparsley, minced

·salt and pepper, to taste
How to Make Garlicky Shrimp and Spinach Stir-fry
- Heat oil in large skillet or wok. Add garlic and cook until starting to brown, remove with slotted spoon and set aside. Add onion and red pepper to wok and cook until slightly softened.
- Add shrimp, paprika and optional red pepper flakes. Cook for a few minutes, until shrimp have turned pink.
- Stir in spinach by handfuls as it wilts. Add garlic back to pan, stir in lemon juice, season to taste with salt and pepper. Sprinkle with lemon zest and parsley before serving.
