fried sea scallops

This is my kid's favorite dish to order at our favorite seafood restaurant in coastal North Carolina. They are so good! This isn't a copy cat recipe, just me trying to mimick an awesome dish. I think I've come close!

Ingredients For fried sea scallops

  • 12-14
    fresh or frozen sea scallops, thawed and patted dry
  • 2
    egg whites
  • 1 c
    flour
  • 1/4 tsp
    salt
  • dash
    ground pepper
  • canola oil for frying

How To Make fried sea scallops

  • 1
    Thaw scallops in cold water. Pat as dry as possible with paper towels.

    Sift together flour, salt, pepper in a shallow bowl.

    Beat egg whites
  • 4
    Roll Scallops in flour, dip in egg wash and then roll in flour again.

    Let scallops sit on a try while oil heats
  • 6
    Heat 1 inches of oil in a deep skillet.

    Gently place scallops into the hot oil. Cook until golden and crispy, about 2 minutes per side. Drain on wire rack or paper towels.

    Sprinkle with a bit more salt if needed.
