Ingredients
- 6 ounces cellophane noodles (glass noodles)
- 3 tablespoons canola oil
- 4 cloves garlic, minced
- 8 ounces calamari, cut into rings and tentacles chopped.
- 2 large eggs, beaten
- 1 medium cucumber, seeded and sliced
- 4 ounces bean sprouts
- 4 ounces fresh spinach
- 2 tablespoons fish sauce
- 3 tablespoons brown sugar
- 1 teaspoon sesame oil
- Hoisin sauce, for garnish
- chopped peanuts, for garnish
How To Make fried cellophane noodles with calamari

Step 1Soak the cellophane noodles in hot water for about 10 minutes. Drain and cut into smaller lengths. Mix the fish sauce, brown sugar, and sesame oil and set aside.

Step 2Heat the oil in a wok. Add the garlic and stir fry for 1 minute. Add the noodles and stir fry for about 3 minutes until browned. Add the shrimp and stir fry for another 2 minutes. Make a well in the middle of the wok and add the eggs cooking and incorporating them into the noodles.

Step 3Add the cucumber, bean sprouts, spinach, and green onions. Stir fry until the spinach is wilted. Pour the fish sauce mixture over and cook for 1 minute.

Step 4Serve drizzled with hoisin sauce and top with peanuts.
