Ingredients For colongo's sampler

  • 8 oz. of andoville sausage, 8 oz. boneless chicken breast, 16 large sea scallops, 2 avacados, pelled, pitted and pureed, 5 oz. white wine, 8 oz. heavy whipping cream , 1/2 tsp chopped garlic, salt and pepper to taste, cajun blackened seasoning salad

How To Make colongo's sampler

    Cut sausage and chicken into 4 equal portions, roll chicken, sausage and scallops in cajun seasoning , heat oil in large saute' pan. Saute chicken and sausage till cooked. Remove from pan. Saute' scollops until cooked . Easy on the scallops do not over cook.. In a separate pan heat cream, wine, avocado and garlic thoroughly. Add salt and pepper to taste. Serve , chicken, sausage and 4 scallops with 1/4 sauce per plate
